There’s something to be said for sugar curing, especially if you’re thinking of using the ham in some stews and other things. I have a recipe in which a sugar-cured ham is diced, and popped into chicken broth with dried apricots and slow-cooked…it’s pretty yummy, and it stretches amazingly.
