  1. Heh. You don’t serve wine with armadillo. An ice cold cerveza and shots of mezcal. Make sure you’ve cleaned it well and washed out the shell before returning the meat to the shell along with white corn kernels, diced jalapenos, diced tomatillos, onions and cilantro. Wrap the wet palm fronds tightly and place over the coals. Eat with plenty of rice and beans on soft flour tortillas after about an hour over low coals. Be sure to start consumption of both cerveza and mezcal when you catch the armadillo so a properly convivial state is achieved prior to consumption.
