  1. Per 1 pound of venison or beef

    1 T Chinese rice wine. A dry white wine will also work.
    1/2 t salt
    2 t soy sauce
    2 t minced ginger
    2 cloves minced garlic
    2 fresh chills finely chopped. Thai green or red chilis about 1.5 in long suffice
    2 t dried crushed chili flakes
    2 t ground cumin
    1/4 t liquid smoke if not using a charcoal or wood grill
    1 t sesame oil to drizzle over cooked meat
    1 scallion green part thinly chopped to sprinkle over cooked meat. Can put the rest in the marinade, if you like.

    Marinate for 12 to 24 hours, mixing meat and marinade occasionally, then grill. Cooking will tame the heat of the spices to a good degree.
